Vegetarian Chili

3 clove garlic, minced
1 large onion, chopped
1 Tb. oil
2 tomatoes, chopped
1 green pepper, chopped
1 small hot pepper, seeded & chopped
12 large mushrooms, sliced
15 oz. can tomato sauce
6 oz. can tomato paste
3 Tbs. chili powder
1 tsp. ground cumin
1/4 tsp. salt
1 lb. dried kidney beans, cooked
Shredded Monterey Jack cheese
Tortilla chips

In a large soup pot, saute garlic & onion in oil. Add remaining ingredients except beans. Allow mixture to cook 15 minutes over medium heat, stirring occasionally. Add beans & cook another 15 minutes, stirring. Top with cheese & serve with chips.
