1/4 c finely chopped onion
1 Tb butter
2 c water
2/3 c hominy quick grits, uncooked
1/2 tsp salt, optional
3 c chopped broccoli, cooked and drained
1 c cheddar cheese, shredded
Saute onion in butter til tender. Add water, bring to boil. Slowly stir in grits and salt. Reduce heat and simmer 2-4 minutes or til thickened, stirring frequently. Add broccoli, heat thoroughly. Remove from heat. Stir in cheese. Serves 6 - 8.
