Best Spinach Dip

1/4 c butter
1 pkg hollandaise sauce blend
3/4 c milk
10 oz. pkg frozen chopped spinach, thawed and drained
4 oz. jar diced pimentos, drained
1/2 c grated Parmesan cheese
1 tsp dill weed
1 c sour cream

As far as spinach dips go, this one is my favorite. Use good good quality Parmesan... it will make or break this dip. In small saucepan, melt butter over medium heat. Stir in hollandaise sauce blend. Gradually stir in milk. Cook, stirring constantly, until sauce comes to a boil. Reduce heat and simmer, stirring constantly, 1 minuter or til thickened. Add spinach, pimientos, cheese and dill. Heat, stirring frequently, unitl cheese is melted and sauce is well blended. Remover from heat. Stir in sour cream until smooth. Makes 3 cups.
