Peach Crisp

3 lbs. just-ripe peaches, peeled & sliced
1 1/2 Tbs. lemon juice
1 tsp. vanilla
1 c. sifted all purpose flour
3/4 c. sugar
1/4 tsp. salt
1/4 tsp. almond extract
1 egg, beaten
3 oz. unsalted butter, melted

Adjust a rack 1/3 down from the top of the oven & preheat to 400. Butter a 2 quart shallow dish & set aside. Place peach slices in a bowl with lemon juice & vanilla. Toss with a spatula to mix. Place peaches in baking dish. Sift together flour, sugar & salt. Stir almond extract into the egg. Drizzle it & melted butter over dry ingredients & stir with a fork until they are moistened & mixture is crumbly. Sprinkle crumbs loosely over peaches. Bake 30-35 minutes. Serve warm or hot with ice cream. Makes 6 servings. Note: If dish needs to brown more, place it under the broiler.
