2 c. unbleached flour
1/4 c. sugar
1 Tb. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
3/4 tsp. nutmeg
1 c. buttermilk
2 Tbs. water
2 Tbs. corn-oil oleo, melted
3 egg whites
2 Tbs. apple juice concentrate, thawed
1 1/2 tsp. vanilla
Preheat oven to 400 degrees. Combine flour, sugar, baking powder, baking soda, salt & nutmeg. In another bowl, combine milk, water, oleo, egg whites, juice & vanilla. Add liquid to dry ingredietns & stir only until dry ingredeitns are moistened. Pour into 12 muffin cups sprayed with non-stick vegetable coating. Bake 20 minutes. Each muffin contains: 126 cal., 1 mg. chol., 2 g fat, 312 mg. sod.
