Alpine Cheese Fondue

2 c. dry white wine
4 c. shredded Swiss cheese
1/4 c. flour
1/4 tsp. salt
1/4 tsp. ground nutmeg
1/8 tsp. granulated garlic powder
1/8 tsp. white pepper
French bread, cut into 1" cubes

Place wine in 3 quart glass casserole. Cover & cook at 70% 2-4 minutes, or until wine is very hot but not boiling. Combine cheeses, flour, salt, nutmeg, garlic powder & pepper in large plastic bag. Shake well to coat cheese evenly with flour & spices. Add all ingredients from plastic bag to heated wine. Blend with a wire whisk. Cook at 70% 4-9 minutes, or until cheese can be stirred smooth with a wire whisk & fondue is hot & bubbly. Serve with bread cubes. Makes 4 cups.
