Zucchini Bread

2 c. unpeeled zucchini, grated
3/4 c. chopped walnuts
2 Tbs. flour
3 c. flour
2 tsps. cinnamon
1/2 tsp. nutmeg
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
4 eggs
2 c. sugar
1 c. vegetable oil
1 c. raisins
3/4 c. chopped walnuts

Preheat oven to 350. Combine zucchini with walnuts & 2 Tbs. flour. Set aside. Combine 3 c. flour with cinnamon, nutmeg, soda, baking powder & salt. Set aside. Beat eggs. Gradually beat sugar & then oil into eggs. With wooden spoon, blend a little of flour mixture & then some zucchini mixture into eggs. Keep adding ingredients until well blended. Add raisins & remaining walnuts. Don't overmix. Turn batter into greased & floured loaf pans & bake 55 minutes. Cool 10 mins in pan. This freezes well. Makes 2 loaves.
