Bahamian Bananas

4 whole bananas, sliced lengthwise
1 c. heavy cream
3 Tbs. lime juice
1/2 stick butter
1/3 c. sugar
2 Tbs. sugar for garnish, optional
Lime for garnish, optional

Melt butter in saute pan until bubbling
sprinkle bananas with half the sugar and saute in butter until brown on both sides and beginning to caramelize. Set aside and keep warm. In another saute pan, bring cream to a boil and reduce 1/3. Add rest of sugar, reduce heat, simmer briefly and stir to incorporate. Add lime juice, stir over heat and check sauce for consistency. Reduce further if you want it thicker, or thin with additional cream. Pour over warm bananas, which have been transferred to warm plates. Sprinkle with a touch of sugar, garnish and serve. Makes 4 servings.
