3 1/2 lb. chicken, cut up
1/2 tsp. salt
1/4 tsp. pepper
2 c. flour
1 c. buttermilk
2 c. vegetable oil
Clean chicken. Season with salt & pepper & chill overnight. Place flour in a paper bag. Set aside. Dip chicken in buttermilk, shake off excess & place a few pieces at a time in bag of flour. Remove chicken & shake off excess flour. Heat oven to 350. Fill large skillet with oil to 1 1/2" deep. Heat until drop of water sizzles in oil. Add chicken pieces, a few at a time. Fry until golden brown. Place chicken in roasting pan. Bake 45 mins.
