1 lb. ziti
12 oz. ricotta cheese
2 eggs, beaten
3/4 c. Parmesan cheese
1/2 tsp. salt
1/4 tsp. pepper
2 Tbs. chopped fresh parsley
3 c. marinara sauce
8 oz. mozzarella cheese, cut into 1/2" cubes
Preheat oven to 350. Cook ziti. Combine ricotta, eggs, 1/2 c. Parmesan, salt, pepper & parsley. Blend well. Toss ziti with 2 c. marinara sauce. Place half of pasta in an 11x7 baking dish. Top with ricotta mixture & half of the mozzarella cubes. Top with remaining ziti, sauce, & cheese. Bake 30-35 minutes.. Serves 6. 501 cal, 22g fat, 58mg chol, 1,118mg sod
