Waldorf Salad with Walnut Vinaigrette

2 heads Bib lettuce
2 Red Delicious apples
1/2 lb. white seedless grapes
1 c. chopped walnuts
Vinaigrette:
1/4 white wine vinegar
1/2 c. toasted, chopped walnuts
1 1/2 Tbs. sugar
1 c. walnut oil
1/2 c. vegetable oil

Slice apples into thin fan-shaped slices about 1/4" thick. Cut grapes in half. Place 3 large lettuce leaves clockwise at 12, 5, & 7, with broader edge of leaves toward rim of plate. Place three slices of apple fanned from the center clockwise at 2, 4, & 8. Place three halves of grapes skin up on top of apple slices at each point where they touch the lettuce at center. Sprinkle chopped walnuts over the salad. Vinaigrette: Combine all ingredients except the oils. Combine oils & whisk into the other ingredients briskly, until thickened. Chill.
