Picadillo Stuffed Green Peppers

4 medium to large green peppers
3/4 lb. ground beef
1/4 lb. ground pork
1 small onion, chopped
2 cloves garlic, chopped
1 c. cooked rice
1/3 c. dark raisins
1 Tb. each: dark brown sugar, cider vinegar, chili powder
3/4 tsp. ground cumin
1/2 tsp. each: ground cinnamon, ground coriander
1/2 tsp. salt
1/4 tsp. ground pepper
12 oz. chunky-style mild salsa
1/4 c. each: Jack & cheddar cheese
1/4 c. minced fresh cilantro

Prepare peppers. Brown meat, onion & garlic. Drain. Mix in rice, raisins, sugar, vinegar, chili powder, cumin, cinnamon, coriander, salt & pepper. Stuff peppers with meat mixture. Pour salsa on top. Sprinkle with cheese, then cilantro just before serving.
