Sweet Potato Cake (Smith House) & Frosting

2 c. sugar
1 1/2 c. cooking oil
4 eggs separated
1 tsp. vanilla
2 1/2 c. flour
3 tsp. baking powder
1/4 tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg
1 1/2 c. grated raw sweet potatoes
4 Tbs. hot water
1 c. nuts, finely chopped
Frosting:
8 oz. cream cheese, softened
1 stick butter, softened
1 tsp. vanilla
1 lb. box confectioners' sugar

Blend sugar & oil. Add yolks & beat well. Add vanilla. Sift together flour, baking powder, salt, cinnamon & nutmeg. Add to sugar mixture. Blend in potatoes, water, & nuts. Fold in stiffly beaten egg whites. Pour into 3 well-greased & floured pans. Bake at 350 for 25-30 minutes. Frosting: Cream cheese & butter together until soft & fluffy. Add vanilla & sugar. Mix on low speed until well-blended, creamy & of spreading consistency.
