2 1/3 c biscuit baking mix
2 T sugar
1/4 t cinnamon
1/4 t nutmeg
1/4 t ginger
1 1/4 c milk
2 eggs
1/3 c canned pumpkin
1/4 c oil
Beat all ingredients with wire whisk until smooth. Pour by scant 1/4 cups onto hot griddle. Serve with maple syrup. Makes 18.
