1/4 c olive oil
2 c minced onion
4 medium cloves garlic, crushed
1 tsp salt
1 tsp each basil & oregano
1 1/2 lbs zucchini, diced small
Black pepper & red pepper to taste
1/2 lb mozzarella, grated
1 c ricotta
Saute onion & garlic in olive oil with salt, basil & oregano for 5-8 minutes. Add zucchini. Stir and cook over medium heat, uncovered unitl zucchini is just tender. Add peppers. Remove from heat & stir in cheeses. Mix very well. Drain off any additional liquid before using.
