1 1/2 tsp. yeast
1 c lukewarm water
2 tsp honey
1 1/2 tsp salt
1 1/2 c unbleached white flour
1 1/2 c whole wheat flour
3 Tbs olive oil
Combine yeast, water & honey. Let rest 5 minutes. Beat in salt & flours. Use a wooden spoon til it is too thick to mix, then turn it out onto a floured surface & knead til smooth (8-10 minutes). Brush with oil & let rise & double in bulk (1 hour). Preheat oven to 450. Punch dough down and divide into 6 equal parts. Flatten, fill and bake 20 minutes on greased cookie sheet.
