Banana Nut Loaf

2/3 c. sugar
1/3 c. shortening or butter
2 whole eggs or 4 egg whites
3 Tbs. buttermilk
1 c. mashed bananas
2 c. sifted self-rising flour
1/4 tsp. baking soda
1/2 c. chopped nuts

Preheat oven to 350. Grease an 8x5x2 baking pan. Mix sugar, shortening & eggs. Stir in buttermilk, bananas and flour with a spoon. Add baking soda & fold in nuts. Bake 50-60 minutes, or until golden brown. 351 cal, 15 g fat, 69 mg chol, 387 mg sod
