Green Onion Smashed Potatoes

6 green onions
1/2 cup olive oil, divided
Salt and pepper to taste
10 new potatoes, quartered
1 bulb roasted garlic
6 tablespoons butter

Preheat oven to 350 degrees. Brush green onions with olive oil and sprinkle with salt and pepper. Roast in oven for 10 to 15 minutes. Remove from oven and chop coarsely. Toss potatoes with remaining olive oil and sprinkle with salt and pepper. Place in pan and roast until tender but not browned, about 30 minutes. Remove from oven. In large bowl, combine green onions, potatoes, garlic and butter. Mash coarsely for a rustic texture. Season to taste with salt and pepper. Per serving: 395 calories (percent of calories from fat, 86), 2 grams protein, 13 grams carbohydrates, 2 grams fiber, 38 grams fat, 47 milligrams cholesterol, 182 milligrams sodium.
