Caramelized Onions

2 T butter
2 large white or red onions, cut into 3/4 inch chunks (2 c)
4 t brown sugar

In a medium skillet heat butter over med-low heat til melted. Add onion. Cover and cook on med-low heat til onion is tender, about 15 mins. Uncover
add sugar. Cook and stir over med-high heat til onion is golden brown, stirring constantly, about 4-5 mins. Server hot over burgers, prime rib, or beef steaks. Makes about 1/3 c.
