3 c. zucchini grated
1 c. buttermilk biscuit mix
1/2 c. finely chopped onion
1/2 c. grated Parmesan cheese
2 Tbs. fresh parsley
1/2 tsp. salt
1/2 tsp. seasoned salt
2 tsps. dried oregano
dash black pepper
1/2 c. vegetable oil
4 eggs, slightly beaten
Preheat oven to 375. Spray 9x13 oblong pan with non stick vegetable spray. Mix all ingredients, except zucchini, together. Lightly fold in zucchini last. Spread evenly in pan. Bake until golden, about 40 mins. Cut into squares, then into triangles. Serve warm. Makes 4-5 dozen.
