Turkey Mornay

1 bunch fresh broccoli
8-10 sliced turkey breast
4 Tbs. butter
3 Tbs. flour
1 c. chicken stock
1 c. half & half
1 egg yolk
3 Tbs. heavy cream
2 tsps. Worcestershire sauce
Salt & pepper to taste
1/4 c. dry sherry or vermouth
1/2 c. grated Parmesan cheese
1/4 c. shredded Swiss cheese
Grated nutmeg & cayenne pepper to taste

Steam broccoli until crisp tender in boiling water. Drain & slice lengthwise. Arrange in the bottom of a shallow baking dish. Place turkey slices over broccoli. Melt butter in heavy saucepan & add flour. Stir to make a smooth paste. Cook for 2 minutes, stirring constantly. Remove saucepan from heat & gradually pour in broth & half & half, stirring constantly. Return saucepan to low heat & cook, stirring constantly, until thickened & bubbly. Beat egg yolk & cream together. Spoon 3 Tbs. of the hot sauce into egg-cream mixture
stir well & pour back into rest of hot sauce. Add Worcestershire sauce, salt, pepper, sherry, 1/4 c. Parmesan, Swiss cheese, nutmeg & cayenne. Cook over low heat until cheese is melted, stirring constantly. Pour sauce over turkey, covering completely. Sprinkle top with remaining Parmesan cheese. Place in a 400 oven & bake 20 minutes until browned & bubbly.
