1 beef flank steak, about 1 1/2 lbs
1/4 c. fresh orange juice
2 Tbs. chili sauce
2 Tbs. soy sauce
2 Tbs. vegetable oil
1 tsp. sugar
1 tsp. grated orange peel
2 cloves garlic, minced
1/2 tsp. salt
1/8 tsp. hot pepper sauce
1 medium orange, thinly sliced
Fresh Fruit Salsa (see recipe)
Orange wedges
Fresh cilantro
Fresh Fruit Salsa:
1/2 c. each diced pineapple, mango, papaya & green apple
1/4 c. each diced red & green bell pepper
2 Tbs. rice vinegar
1 Tb. minced fresh cilantro
4 tsps. sugar
1/4 tsp. crushed red pepper pods

Combine the orange juice, chili sauce, soy sauce, oil, sugar, orange peel, garlic, salt & hot pepper sauce. Place flank steak in utility dish or plastic bag. Add marinade, turning to coat. Place orange slices on top of steak. Cover dish or tie bag securely & marinate in the refrigerator 3 hours, or overnight if desired, turning occasionally. Then pour off marinade & orange slices, discarding all but the steak. Broil the meat over medium coals, turning once. Broil 10-14 minutes, or to desired degree of doneness. Carve the steak into thin slices & serve with salsa on the side. Garnish with orange wedges & fresh cilantro. Makes 4 servings. To prepare Fresh Fruit Salsa: Combine all ingredients. Can be prepared overnight.
