Old Fashioned Turkey Hash

4 Tbs. butter
1 large onion, minced
5 small boiled potatoes, peeled, cooled & diced
1 large green pepper, stemmed, seeded & diced
Pinch of minced rosemary
Salt & pepper to taste
3 1/2 c. diced cooked turkey
1/4 c. leftover turkey gravy
1/4 c. chopped fresh parsley
4 poached eggs (optional)

Melt butter in a frypan & saute onion until golden. Add potatoes & green pepper. Stir for a minute or two & season with rosemary, salt & pepper. Mix in turkey & cook for a few minutes. Add gravy & cook down a few minutes longer. Fold in chopped parsley. Serve immediately & top each serving with a poached egg, if desired. Or serve over buttered, toasted biscuits. Makes 4 servings.
