2 Tbs. oil
1/2 c. each chopped onion, celery & green bell pepper
1 tsp. minced garlic
15 oz. can tomato sauce
14.5 oz. can chicken broth
1 1/2 c. diced, cooked chicken
1 1/4 c. water
1 c. cooked rice
1 c. sliced okra
1 tsp. salt
1/2 tsp. hot pepper sauce
1/4 tsp. each thyme & basil
1/4 tsp. gumbo file (opt)
1 bay leaf
Heat oil
saute onion, celery, pepper, & garlic until tender. Stir in remaining ingredients. Simmer, uncovered, 20 minutes
stirring occasionally. Remove bay leaf & serve. Makes 7 c.
