Pork Goulash

2 Tbs. butter
Pinch of thyme
2 Tbs. oil
1 Tb. caraway seeds
6 onions, sliced
Zest of 1 lemon
1/4 c. paprika
2 cloves garlic
1/4 c. vinegar
2 lbs. pork stew meat
2 Tbs. tomato paste
1/4 c. water
Salt & pepper

Melt the butter & oil & saute the onions for 5-10 minutes, until they turn a rich brown. Mix the paprika & vinegar, add to the pot & cook a few minutes. Stir in the pork cubes & stir over high heat until they lose their pink color. Add the tomato paste mixed with water & season with salt, pepper & thyme, cover & simmer for about 2 hours. Just before serving, pound the caraway, lemon zest & garlic with a mortar & pestle or drop through the feed tube of a food processor while the metal blade spins. Add to the stew, cook 15 minutes & serve. Makes 6 servings.
