Swedish Pancakes

6 eggs
4 cups milk
2 cups all-purpose flour
1 stick melted butter
1 tablespoon granulated sugar
1 teaspoon salt
Confectioners' sugar (optional, for garnish)
Lingonberries or syrup

In a large mixing bowl, add the eggs and beat well. Then add the milk, flour, melted butter, sugar and salt, beating well after each ingredient is added. Heat griddle over medium heat. Pour small amount of batter in center of pan (about 1/4 to 1/3 cup) and turn all ways to coat. Cook a minute or two, until lightly browned, and then turn the pancake over and cook a minute on other side. To serve, place 1 pancake on plate, spread with butter and lingonberries (or syrup), cover with a second pancake, roll up and enjoy! (Sprinkle rolled pancake with confectioners' sugar if desired.) Per serving: 116 calories (percent of calories from fat, 50), 4 grams protein, 10 grams carbohydrates, less than 1 gram fiber, 6 grams fat, 63 milligrams cholesterol, 170 milligrams sodium.
