Almond Poppy Seed Muffins

1 egg, beaten
3/4 c. milk
1/2 c oil
1 1/2 tsps. almond extract
2 c. self-rising flour, unsifted
1/3 c sugar
1 Tb. poppy seeds

Preheat oven to 400. In a large bowl, mix together the egg, milk, oil & almond extract. In a separate bowl, mix together the flour, sugar & poppy seeds. Stir dry ingredients into liquid mixture just enough to mix. Spoon into greased muffin tins. Bake 20 minutes. Makes 12. 198 cal, 11g fat,123 25mg chol, 296mg sod
