1/2 small onion, finely chopped
1 jalapeno pepper, seeded &
finely chopped
1 medium tomato, finely chopped
1 clove garlic, finely chopped]
10 sprigs cilantro, chopped
3 ripe avocados, peeled & seeded
1/2 tsp. salt
Juice of 1/2 lime
Tortilla chips & additional
chopped onion, cilantro, radish
slices, crumbled fresh cheese
In ,medium bowl, combine onion, jalapeno, to,mato, garlic & cilantrol Scoop out avocado meat & gently add to mixture. Using a fork, roughly mash the avocado, mixing in all ingredients. Flavor with salt, then lime juice. Set aside a few minutes to let flavors blend. Serve with tortilla chips & other condiments. To store guacamole, cover with plastic wrap & refrigerate. Makes 12 1/4 c. servings.
