Cake:
6 eggs
1 c milk
2 tsps. baking powder
1/2 lb. butter
1 tsp. vanilla
Dash salt
2 c. sugar
3 c. flour
Frosting:
2 lbs. confectioners sugar
2 squares bitter chocolate, melted
1/2 stick butter
1/2 c. Pet milk
1/4 tsp. salt
Cream butter & sugar. Add eggs. Sift flour, salt & baking powder
add alternately with milk. Add vanilla. Divide batter evenly between 3 greased round cake pans. Bake in a preheated 350 oven for 25 minutes or until a wooden pick inserted in the center comes out clean. Frost with chocolate icing when completely cooled. To make frosting: Sift sugar & salt. Melt butter over low heat in a large saucepan. Add remaining ingredients to the saucepan & stir until well mixed. Do not allow mixture to boil.
Growing up we called this "Aunt Gin's Cake" or "Chocolate Outside Yellow Inside." Aunt Gin was Grandad's aunt. Truth was, this recipe was Mamaw's because Gramalie thought her mom's recipe was better.
