Apple Fritters

1 medium cooking apple
6 Tbs. plain flour
1 1/2 Tbs. sugar
1/8 tsp. salt
1 small egg, separated
2 Tbs. milk
1 1/2 Tbs. sugar
1/4 tsp. cinnamon
Oil for deep fat frying

Core & peel the apple & cut into 1/4" rings or slices. Combine flour, 1 1/2 Tbs. sugar & salt. Beat together the egg yolk & milk. Beat egg white separately until stiff. Mix egg yolk mixture into flour mixture, stirring until smooth
fold in the beaten egg white. In small, shallow bowl. combine remaining sugar & the cinnamon. You can use nutmeg if you prefer. Dip apple pieces in the sugar mixture, then the batter, making sure the apple is well covered. Fry in hot oil in small deep frying pan. Do not use basket or fritters will stick to it. Fritters will float to the top. Turn them once. Fry until they are golden brown. Serve warm. Makes 1 serving. Dip: small amount of whipped cream or commercial topping. Stir in 1 tsp. maple syrup & a few crystals of salt.
