Jeb's Favorite Cookies

8 oz. package pitted dates, snipped
1/3 c. sugar
2 Tbs. lemon juice
1 1/2 tsps. vanilla
3 c. flour
1/2 tsp. baking soda
1/2 c. butter
1/2 c. shortening
1/2 c. sugar
1/2 c. brown sugar
1 egg
3 Tbs. milk

Combine dates, 1/2 c. sugar & 1/2 c. water. Boil then reduce heat. Cook, stirring until thickened. Add lemon juice & 1/2 tsp. vanilla. Cool. Combine flour, soda & 1/2 tsp. salt. Beat butter & shortening for 30 seconds
add 1/2 c. sugar & brown sugar & beat until fluffy. Add egg, milk & remaining teaspoon vanilla
beat well. Add dry ingredients, beat well. Chill dough. Take 1/2 of dough, roll into 12x10 rectangle on wax paper. Spread each retangle with half of date mixture. Roll, jelly roll style. Moisten & pinch edges to seal. Wrap in wax paper. Chill. Cut into 1/4" slices. On greased cookie sheet bake at 375 for 12 minutes. Makes 72 cookies.
