2 c. flour
1 c. unsalted butter, softened
1 c. powdered sugar, sifted
1 egg yolk
1 tsp. vanilla extract
1 1/4 c. coarsely chopped walnuts
2 Tbs. medium ground coffee beans
1 1/2 c. walnut pieces, optional
Preheat oven to 350. Butter several baking sheets. Place flour in work bowl of a food processor. Add butter, sugar, yolk & vanilla & pulse until just blended. Mix in chopped walnuts & coffee beans. Place heaping teaspoonsful of mixture on baking sheets. Flatten slightly
top each mound with nut. Bake 12-15 minutes.
