Johnny Appleseed Cake

1 cup chopped, peeled tart apples, such as Granny Smith
3/4 cup granulated sugar
1/2 cup all-purpose flour
1 teaspoon baking powder
1/2 cup chopped walnuts or pecans
1 egg, slightly beaten
1 tablespoon lemon juice
1 teaspoon vanilla extract
Pinch salt
Ground cinnamon to taste
Whipped cream or ice cream

Heat oven to 350 degrees. Butter an 8-inch pie pan. In a large bowl, combine apples, sugar, flour, baking powder, nuts, egg, lemon juice, vanilla and salt. Stir in cinnamon to taste. Batter will be thick. Spread in prepared pan and bake 25 minutes in oven center. Cool and serve warm or at room temperature. Top wedges with whipped cream or ice cream. Per serving (without topping): 222 calories, 5 grams protein, 7 grams fat (percent calories from fat, 27), 38 grams carbohydrates, 31 milligrams cholesterol, 130 milligrams sodium, 1 gram fiber.
