Parmesan Herb Popovers

1 c. all purpose flour
1 c. milk
1 Tbs. melted butter
2 eggs
1/4 c. grated Parmesan cheese
1 Tb. minced fresh dill
1 Tb. minced fresh basil, chives, sage, oregano, or tarragon

Preheat oven to 450. Generously oil 6 popover cups, glass custard cups or tins. Place in the oven. Meanwhile, in a deep mixing bowl, place flour, milk, melted butter & eggs. Beat together lightly with wire whisk until well mixed. Stir in cheese, dill & another herb (or mix them) until just mixed. Remove pan from the oven
pour batter into cups to fill 1/2 to 2/3 full. Bake 15 minutes. Reduce heat to 350 and bake 15 minutes more, or until popovers are firm & golden. Carefully remove from the pan
make a few slits in the bottom of each popover with the tip of a knife to remove steam. Serve hot. Makes 6
