2 c. unbleached flour
1/2 c. unsweetened cocoa powder
1/2 c. sugar
1 1/2 tsps. baking powder
1 1/2 tsps. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1 tsp. instant coffee
1/4 c. boiling water
1 egg, lightly beaten
1/4 c. canola oil
1 c. non-fat milk
2 Tbs. white vinegar
1 Tb. vanilla
Preheat oven to 350. Spray loaf pan with non-stick vegetable spray. In a large bowl, combine flour, cocoa, sugar, baking powder, baking soda, salt & cinnamon. Mix well. In a small bowl, combine coffee & water
stir to dissolve. In another bowl, combine egg & oil
mix well. Add milk, vinegar, vanilla & coffee mixture
mix well. Combine liquid ingredients to dry ingredients & mix until dry mixture is moistened. Do not overmix. Spoon into prepared pan & bake 55-60 minutes. Cool for 15 minutes in pan on a rack. Remove from pan & cool completely before slicing. Store tightly wrapped in refrigerator. 130 cal, 5g fat, 14mg chol, 175mg sod
