Sun-Dried Tomato Hummus

1 (15-ounce) can chickpeas, rinsed and drained
1 (7-ounce) jar sun-dried tomatoes in oil, drained and coarsely chopped
1 clove garlic, chopped
1/2 cup mayonnaise
1/4 cup grated Parmesan cheese
2 tablespoons lemon juice
1 teaspoon chopped fresh basil
1/8 teaspoon ground red pepper

A killer party stand-by. In a food processor, combine the chickpeas, sun-dried tomatoes, garlic, mayonnaise, Parmesan, lemon juice, basil and red pepper. Process until smooth, stopping once to stir well. Serve with pita bread wedges and baby carrots. Per 1 tablespoon: 115 calories (percent of calories from fat, 61), 3 grams protein, 9 grams carbohydrates, 1 gram fiber, 8 grams fat, 4 milligrams cholesterol, 181 milligrams sodium.
