Potato Croquettes Stuffed with Meat (Mezze)

2 c. leftover mashed potatoes
1 c. ground beef
1 Tb. oil or butter
Salt & pepper
1/8 tsp. allspice
3 Tbs. fresh parsley, minced
2 green onions, chopped
Cayenne pepper (optional)
1 beaten egg, mixed with 1 Tb water
Seasoned bread crumbs
Oil for frying

Shape the mashed potatoes into balls the same size of small limes, (about 10). Set aside. Saute beef in oil, seasoning with salt, & pepper & allspice. Add parsley & green onions during the last minute of cooking. Taste for seasoning. If you like spicy food, add a bit of cayenne pepper. Let cool in a colander until the oil has dripped away. Holding the potato ball in left hand, insert index finger into mixture & create a hollow center in the middle. Fill with meat mixture & seal opening. Place croquette between palms of hands & press to flatten slightly into a patty shape. When all potato patties have been stuffed, dip each one in beaten egg & then into bread crumbs.
