4 fresh ripe, firm tomatoes
6 small fresh basil leaves, or a few pinches oregano
6 1/2" thick slices good crusty country style bread
3-4 garlic cloves
Salt & pepepr
3 Tbs. extra virgin olive oil

Wash the tomatoes. Split them in half lengthwise, picking out as many seeds as possible with the tip of a paring knife. Dice tomatoes into 3/4" cubes. Wash basil leaves. Shake them dry & tear them by hand into tiny pieces. Over a hot charcoal grill, grill bread on both sides. While still hot from the grill, rub one side of each slice with the mashed garlic. Spread over it the tomato & basil, sprinkle with salt & a grinding of pepper, & top with a trickle of olive oil. Serve at once. Makes 6 portions.
