2 Tbs. butter
2 medium zucchini, sliced
2 c. sliced mushrooms
1/2 green pepper, cut into strips
1/2 tsp. ground cumin
Salt & pepper to taste
1 c. finely chopped tomato
1/4 c. chopped green onion
In a large heavy frying pan with a heat proof handle set over medium coals, melt the butter. Add zucchini, mushrooms, pepper, cumin, salt & pepper. Cook & stir 4-5 minutes or until vegetables are tender. Add tomato & onion, cook 1 minute longer. Serves 6. 52 cal, 4 g fat, 10 mg chol, 42 mg sod
