Turkey Croquettes

3 Tbs. butter
1/3 c. all purpose flour
1 c. turkey or chicken stock
2 1/4 tsps. salt, or to taste
1 1/4 tsps. pepper
1/2 tsp. dried thyme
2 c. finely diced turkey
1 tsp. chopped parsley
2 eggs
2 Tbs. milk
1 1/2 c. fine bread crumbs

Melt butter in saucepan over low heat. Stir in flour. Gradually stir in stock. Add some of the salt & pepper & thyme. Cook & stir over low heat until thick & creamy. Add turkey & parsley. Blend. Remove from heat. Beat one of the eggs. Add to turkey mixture. Cook & stir over medium heat about 1 minute longer. Cool. Shape into croquettes. Combine remaining egg with milk
beat well. Add salt & pepper to the bread crumbs. Roll croquettes in crumbs, dip in egg, & then roll again in crumbs. Heat 1" of vegetable oil in a heavy frypan to about 375. Add croquettes & fry for 1-2 minutes on each side. Drain. Makes 12 croquettes.
