1 c peeled & cubed baking potato
1/2 t dried thyme
1 1/2 c peeled & cubed pumpkin
1/2 t salt
1/4 t black pepper
1/2 c fresh spinach leaves
1 T chopped parsley
4 T grated Parmesan cheese
