Lyn's Shrimp Pie

2 tablespoons extra-virgin olive oil
1 large Vidalia onion, chopped
3/4 pound raw fresh shrimp, peeled, deveined and diced
4 ounces feta cheese, crumbled
4 ounces mozzarella cheese, shredded
4 ounces Cheddar cheese, grated
1/2 cup chopped fresh cilantro
1/2 cup chopped fresh parsley
1/4 cup chopped society garlic or chopped fresh chives
1 teaspoon freshly ground black pepper
Pastry for a 2-crust 9-inch pie, unbaked
Dried red pepper flakes to taste

In a large skillet, heat the olive oil and saute the onion over medium heat. Remove from heat, drain and place in a large mixing bowl
cool slightly, about 10 minutes. Add shrimp, feta cheese, mozzarella cheese, Cheddar cheese, cilantro, parsley, garlic or chives and black pepper. Line a 9-inch pie pan with bottom crust. Pour shrimp mixture into it. Top with red pepper flakes. Adjust the top crust over and crimp edges decoratively. Bake for 10 minutes, reduce heat to 350 degrees and cook another 20 to 25 minutes. Let rest for 10 minutes before serving. Per serving: 460 calories, 31 grams fat, 103 milligrams cholesterol,609 milligrams sodium.
