4 Tbs. butter
6 Tbs. flour
3 1/2 c. warm milk
6 Tbs. grated Parmesan cheese
1 egg
Salt & pepper
8 slices toast, crust removed
12 oz roast turkey, thinly sliced
8 strips fried bacon
2 Tbs. grated Parmesan cheese

Melt butter in a mdium saucepan over low heat. Remove from heat & stir in flour. Gradually add milk, mixing well after each addition. Cook over medium heat, stirring constantly, until mixture comes to a boil. Remove from heat & add cheese, set aside. Beat egg lightly in a medium bowl. Gradually dd the sauce to the egg, stirring briskly. Return mixture to saucepan & cook over medium heat, stirring constantly for 3 milnutes or until almost boiling (do not bring to a full boil). Season with salt & pepper. For each open-face sandwich, place 2 slices of toast on a flameproof dish or metal pan. Cover each slice with 1 1/2 oz of turkey. Pour 3/4 c. of sauce over turkey. Place on middle rack 8" below broiler. Broil at 550 for 4 minutes or until sauce is speckled brown & bubbly. Remove & cross 2 pieces of bacon on top.
