Cuban Sandwiches

Sandwiches:
8 oz. thinly sliced pork loin, marinated & drained
2 tsps. butter
8 oz. thinly sliced boiled ham
4 oz. sliced Swiss cheese
16 thin slices dill pickle
4 8"-oval rolls Cuban bread, halved
Mojo Sauce:
1 c. water
1/2 c. peeled garlic cloves
1/2 c. Spanish olive oil
1/4 c. cider vinegar
2 tsps. salt
1/2 tsp. cayenne pepper
1/2 tsp. dry thyme leaves
1/4 c. fresh lemon juice

Mojo Sauce: Bring water to a boil in a small saucepan
add garlic & boil gently for 4 mintues. Place garlic, cooking water, olive oil, viengar, salt, pepper, thyme & lemon juice in a blender
blend until garlic is pureed. Marinate thinly sliced pork loin in Mojo Sauce for 4-6 hours or overnight in a covered plastic or ceramic container. Sandwiches: Saute pork in butter in a large skillet over medium heat for 5 minutes or until brown. Remove from pan & cool slightly. Assemble 4 sandwiches using 2 oz. pork, 2 oz. ham, 1 oz. cheese, 4 pickle slices, & 1 roll per sandwich. Grill each sandwich in the skillet over medium heat for 3-5 minutes per side or until heated through & cheese is melted. Slice sandwich diagonally into halves.
