1/2 lb. tomatillos
1 small onion, quartered
1-2 hot yellow banana peppers, chopped
1 clove gatrlic, chopped
Big pinch of sugar
1/2 tsp. ground cumin
1-2 Tb. lime or lemon juice
2-3 Tbs. minced fresh cilantro

Remove & discard tomatillo husks & wash the fruits to remove sticky residue. Combine in a small saucepan with water to cover. Bring to a boil, then simmer 3-6 minutes, until not quite soft. Meanwhile, combine onion, peppers & garlic in a food processor. Process to a chunky texture. Scoop into a bowl, stir in sugar & cumin & gradually add juice to taste. Stir in cilantro & serve at room temperature. 16 cal, no fat or chol, 4 mg sod
