Fried Bahamian Bananas

2 eggs, separated
1/2 c. beer, at room temp
2 tsps. corn oil
1/2 c. flour
1/2 tsp. dry mustard
1/4 tsp. salt
1/8 tsp. white pepper
1/8 tsp. ground cinnamon
Dash of ground allspice
15 bananas
Flour
Oil for deep-fat frying
Powdered sugar for dusting

Allow beer to go flat for about 30 mins. Combine egg yolks with beer, oil, flour, seasonings. Beat until just blended. In separate bowl, beat egg whites until stiff & gently fold into batter. Cut bananas in half & then cut lengthwise in half again. Lightly toss the banana quarters in flour. Dip bananas in batter & roll until completely coated. (Allow excess batter to drain before frying.) Heat oil to 375 & carefully drop bananas into oil. Fry 3-4 minutes until crisp & golden. Drain on paper towels, sprinkle with sugar. Serves 30.
