Peppermint Patty Surprise

1/2 cup butter or margarine
1 cup white sugar
2 egg
1 1/2 teaspoons vanilla extract
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
2/3 cup confectioners' sugar
12 ounces mint flavored chocolate chips
1 (13 ounce) package of mini peppermint patties

Preheat oven to 350 degrees. In a microwave oven or the top half of a double boiler, melt 1 cup of the mint chocolate chips, and set aside to cool. In a large bowl, cream butter and sugar
add melted chocolate, eggs and vanilla. Stir in flour, baking powder, and salt. Then stir in the remaining mint chocolate chips. Unwrap and cut the mini peppermint patties into 4 pieces. Wrap about 1 tablespoon of dough around each quarter. Roll balls in confectioners' sugar and place 1 1/2 inches apart on the cookie sheet. Bake for 10 to 12 minutes in the preheated oven. Before the cookies are completely cool, roll in the confectioners' sugar again.
