Oatmeal Cookie Mix for Gift Jars

2 3/4 cups all-purpose flour
2 teaspoons salt
1 teaspoon baking soda
2 cups firmly packed brown sugar
1 cup granulated sugar
2 cups solid vegetable shortening
1 (18-ounce) container (6 cups) oats (quick or old-fashioned, uncooked)
4 (1-quart) clear jars with lids
4 cups Add-Ins (see below)

Makes 4 quart jars, each of which will make 3 dozen cookies To make the cookie mix: Stir together flour, salt and baking soda in a very large bowl. Add sugars and mix well. Cut in shortening with a pastry blender or two knives until mixture is crumbly. Stir in oats. To assemble the gift jars: In a 1-quart clear jar with lid, layer 1 1/3 cups cookie mix, 1/2 cup Add-Ins (see below), 1 cup cookie mix, 1/2 cup Add-Ins, 1 cup cookie mix. Place lid on jar and seal tightly. Repeat using remaining mix and add-Ins to fill 3 more jars. Decorate and add gift tags with preparation instructions (see below). Add-Ins: Each of these variations makes enough Add-Ins for 1 jar. Confetti Cookies: 1 cup candy-coated chocolate pieces, divided. Cherry-Berry Cookies: 1/2 cup dried cherries, 1/2 cup dried cranberries. Nutty Chocolate Chippers: 1/2 cup chocolate chips, 1/2 cup chopped walnuts, pecans or almonds. Peanut Chocolate Cookies: 1 cup peanut butter-flavor chips, divided
1/4 cup unsweetened cocoa powder (add to top of jar). Double Chocolate Cookies: 1 cup white or dark chocolate chips, divided
1/4 cup unsweetened cocoa powder (add to top of jar). --- From: Quaker Oats Preparation instructions (don't forget to include this with your gift jar): Heat oven to 350 degrees. Lightly spray cookies sheets with cooking spray. In a large bowl, combine 1 large egg, 1/4 cup water ( 1/2 cup water for Double Chocolate Cookies or Peanut Chocolate Cookies) and 1 teaspoon vanilla. Mix well. Add entire contents of 1 jar of Oatmeal Cookie Mix. Stir with fork until all dry ingredients are moistened and a stiff dough forms. Drop by rounded tablespoonfuls onto cookie sheets. Bake 14 to 16 minutes or until light golden brown. Cool 1 minute on cookie sheets
remove to wire cooling racks. Cool completely. Makes 3 dozen.
