Baking Mix Cookies for Gift Jars

For Hazelnut Cookies:
1 cup chopped hazelnuts, toasted and cooled completely
1/2 cup packed dark brown sugar
1 cup biscuit and baking mix
1/2 cup packed light brown sugar
1 cup biscuit and baking mix
For White Chocolate-Macadamia Nut Cookies:
1/2 cup chopped macadamia nuts
1/2 cup white chocolate or vanilla milk chips
1/2 cup packed dark brown sugar
1 cup biscuit and baking mix
1/2 cup packed light brown sugar
1 cup biscuit and baking mix
For Chocolate Lovers' Cookies:
1/3 cup milk chocolate chips
1/3 cup white chocolate or vanilla milk chips
1/3 cup semisweet chocolate chips
1/2 cup packed dark brown sugar
1 cup biscuit and baking mix
1/2 cup packed light brown sugar
1 cup biscuit and baking mix
For Chewy Coconut-Almond Cookies:
1 cup shredded coconut
1/2 cup sliced almonds, toasted and cooled completely
1/2 cup packed dark brown sugar
1 cup biscuit and baking mix
1/2 cup packed light brown sugar
1 cup biscuit and baking mix

Each variation is enough for a 1-quart jar
each makes 30 cookies These cookies are even easier for the giver because you start with packaged buttermilk biscuit and baking mix (like Pioneer or another brand), so there's no cutting in shortening. Layer into lidded 1-quart jars along with sugar and add-ins, in the order given. Top off with fabric and ribbon and attach a gift card with baking instructions. To assemble: Layer ingredients in order listed into 1-quart jar. Decorate top and attach a gift card with these directions: To make cookies: Empty contents of jar into medium bowl. Stir in 1 stick butter or margarine, melted, and 1 large egg and 1 teaspoon vanilla or almond extract until well-combined. Shape into 1-inch balls. Place on baking sheets coated with cooking spray. Bake at 375 degrees for 10 to 12 minutes or until cookies are light golden brown. To make as bar cookies, mix as above. Press into 8-by-8-by-2-inch baking pan coated with cooking spray. Bake at 350 degrees for 20 to 24 minutes or until light golden brown and center is almost set. Cool on rack, then cut into 16 squares.
