Key Lime Cake

1 1/2 c sugar
2 c flour
1/2 t salt
1 t baking powder
1/2 t baking soda
3 oz. package lime gelatin
5 eggs
1 1/4 c cooking oil
3/4 c orange juice
1/2 t vanilla
1 t lemon extract
3 T Key lime juice
5 T confectioners' sugar
Whipped cream
Lime slices

Preheat oven to 350. Grease & flour 9x13 pan
set aside. In a large bowl, thoroughly combine sugar, flour, salt, baking powder, soda & gelatin. Add eggs, oil. orange juice, vanilla, lemon extract & lime jice & mix well, for about 1-2 mins with an electric mixer. Pour batter into pan & bake for 25-30 mins. Meanwhile, mix together lime juice & confectioners' sugar. When cake is done, remove from oven & cook for 15 mins - do not remove from pan. When cooled, prick holes all over the cake with a fork. Drizzle the lime juice & sugar mixture over the cake. Cover the cake & refrigerate in the pan. To serve, cut in squares & top with whipped cream & thin lime slices, if desired. 339 cal, 19g fat, 67mg chol, 179mg sod
